Stuffed mushrooms with alheira and spinach

The alheira is a type of Portuguese sausage, made with meats (usually pork, veal, duck, chicken, quail or rabbit) and bread. Alheira derives from alho (garlic) as it was usually seasoned with it, although today not all of them are.

This recipe pick uses another previously published – Sautéed spinaches with alheira de Mirandela – to fill mushrooms, and cheese is added on top.

Fire time

25 minutes at moderate temperature (250-300°C / 482-572°F)

Ingredients

  • Mushrooms;
  • Alheira de Mirandela;
  • Spinaches;
  • Cheese;
  • Garlic;
  • Olive oil, ideally extra virgin;
  • Salt, ideally salt flower or sea salt.

Steps

Time needed: 35 minutes.

  1. Wash the mushrooms, remove the stalks, fill the mushrooms with oil and season with salt

    Be generous with the oil

  2. Insert them in the oven

    You must use a container resistant to high oven temperatures, we suggest ceramics, retain heat for a long time, keeping food warm

  3. Remove the mushrooms from the oven

    They should be a little toasted

  4. Fill the mushrooms with Sautéed spinaches with alheira de Mirandela and add some cheese top and insert in the oven

    Be generous with the filling

  5. Remove the mushrooms from the oven

Sautéed spinaches with alheira de Mirandela

The alheira is a type of Portuguese sausage, made with meats (usually pork, veal, duck, chicken, quail or rabbit) and bread. Alheira derives from alho (garlic) as it was usually seasoned with it, although today not all of them are.

Although alheiras are typically associated with the city of Mirandela, in Trás-os-Montes (behind the mountains) region, but are frequent in are northwest part of Portugal.

Ingredients

  • Alheira de Mirandela;
  • Spinaches;
  • Garlic;
  • Olive oil, ideally extra virgin;
  • Salt, ideally salt flower or sea salt.

Steps

Time needed: 35 minutes.

  1. Wash the spinach, drizzle with oil and season with garlic and salt

  2. Insert them in the oven

  3. Remove the filling from the alheira and mix with the spinach

Roasted potatoes are great to go along with smoked food and drinks with friends. This recipe is very easy to make, relatively fast and fresh.

Fire time

25 minutes at moderate temperature (200-250°C / 392-482°F)

Ingredients

  • New patatoes;
  • Garlic;
  • Olive oil, ideally extra virgin;
  • Rosemary, ideally fresh;
  • Salt, ideally salt flower or sea salt.

Steps

Time needed: 35 minutes.

  1. Wash the patotoes and cut them in half our quarters

    They should be of a more or less similar size to cook evenly, leave them with the skin

  2. Add garlic

    You may mince the garlic if you like, but you may simply smash it with the knifeesmagando alho para os cogumelos

  3. Season with rosemary and salt and taste

    Separate the needles from the rosemary and mix, be generous, the rosemary will give a fresh aroma to the dish

  4. Drizzle with olive oil

    Be generous

  5. Insert the container with the preparation in the oven

  • Fresh mushrooms;
  • Garlic;
  • Olive oil, ideally extra virgin;
  • Black pepper, ideally freshly ground;
  • Salt, ideally salt flower or sea salt.

Steps

Time needed: 25 minutes.

  1. Wash and laminate the mushrooms

    Slice the mushrooms with approximately 4mm thickness (half little finger)

  2. Add garlic

    You may mince the garlic if you like, but you may simply smash it with the knifeesmagando alho para os cogumelos

  3. Season with black pepper and salt and taste
